Why does white wine taste spicy?

There are about 2% trace ingredients in white wine. Although the proportion is very small, the substances it contains are very rich. The aldehydes in it are the specific source of the spicy taste.

The production of aldehydes depends on many reasons, such as excessive use of auxiliary materials and using them in production without going through the corresponding processing steps; too high fermentation temperature; uneven fermentation speed, etc., all of which will cause acetaldehyde to be produced in the wine, resulting in an increase in the spiciness of the wine.

Are the spiciness of white wine and that of chili pepper the same kind of spiciness?

From a physiological perspective, the human body has only four tastes: sour, sweet, bitter, and salty. Spiciness is a kind of "pain". The spiciness of liquor is caused by acetaldehyde stimulating nerve fibers, while the spiciness of peppers is caused by the capsaicin in peppers stimulating the spiciness receptors, which produces a "feeling" of burning.

Beer may contain histamine, which, when absorbed by the human body, stimulates the capillaries on the intestinal wall to expand continuously, making alcohol easier to absorb; at the same time, the chlorogenic acid contained in beer can also promote nerve excitement, accelerate gastrointestinal motility, and promote the absorption of ethanol.

At the same time, do not mix alcohol with carbonated drinks containing carbon dioxide. When alcohol enters the liver, it will generate acetaldehyde under the action of alcohol dehydrogenase, and then acetaldehyde will be metabolized by acetaldehyde dehydrogenase. However, the activity of acetaldehyde dehydrogenase in some people's bodies is very low, which makes acetaldehyde unable to be completely metabolized. At this time, the acetaldehyde remaining in the body will cause capillary dilation, which is manifested as blushing. Therefore, people with blushing faces are those who cannot drink alcohol.

Since alcohol can directly stimulate dopamine neurons and promote the release of dopamine, when the alcohol content in the human blood reaches 0.1%, the body will become more excited under the action of dopamine and the alcohol stimulation of the cerebral cortex, and will feel "lightheaded"~

What are some magic tricks to sober up?

You can have a cup of yogurt before drinking. Yogurt can form a protective film on the gastric mucosa, thereby reducing the passage rate of alcohol molecules, which can alleviate the absorption of alcohol to a certain extent.

At the same time, high-fiber foods can also help to sober up. When alcohol enters the body while drinking, high-fiber foods will expand rapidly, quickly wrap up the alcohol molecules and excrete them out of the body without being absorbed by the body, so that alcohol will not cause harm to the human body.

You can drink more honey water after drinking. Since the rich fructose in honey can quickly enter the blood, it can help metabolize alcohol. In addition, drinking more boiled water after drinking can also accelerate the absorption and metabolism of alcohol.
