Why is tangerine peel steamed and dried three times?

We all know that the most important thing when cooking is the color, aroma and taste. To achieve color, aroma and taste, the heat is one aspect, and another more important aspect is the choice of seasoning. The seasoning must be added in the right amount to make the dish taste delicious. Many people like to put some dried tangerine peel in stews, but the production process of dried tangerine peel requires three steaming and three drying. So why does dried tangerine peel need to be steamed and three drying?

1. The steps to make tangerine peel are as follows:

After buying oranges, wash them first, then soak them in salt water for 20 minutes, and finally rinse them repeatedly with clean water.

After washing the oranges, peel them and place them in the sun with the white part facing upwards to dry. Remember to keep them ventilated.

After the orange peel is dried, put it in a steamer and steam it for about 10 minutes to allow the steam to steam the orange peel thoroughly. Repeat the drying and steaming process 3 times.

After three steamings and three dryings, the aroma of the tangerine peel will be released. Seal it in a glass jar immediately and it can be eaten after one year.

Second, because the volatile oil contained in fresh orange peel has a strong pungent smell, repeated steaming will allow the volatile oil to evaporate. This is a good way to enhance the medicinal properties of traditional Chinese medicine.
