Most of the ether was evaporated and the residue was analyzed by gas chromatography-mass spectrometry. 46 compounds were identified, accounting for 83.30% of the peak area, including 4 sulfur-containing compounds, 11 hydrocarbon aromatic compounds, 5 aldehydes and ketones, 6 long-chain alkanes, 2 olefins, 10 alcohols and phenols, 5 esters, and 3 organic acids. The aromatic substances in the flowers of Allium serrata are mainly sulfur-containing compounds, aldehydes, ketones, hydrocarbon aromatic compounds, long-chain olefins, etc. Vita-min E, ?-, ?-tocopherol, 3?-hydroxy-5-ene-ergostane, and 3?-hydroxy-5, 16-diene-pregnenolone are substances with strong physiological activity.
