What was originally a wonderful dinner for relatives and friends turned into a tragedy in which nine people died of poisoning. The doctors' full efforts to save them still failed, and the lives of three families were forced to change. The culprit of this food poisoning tragedy was not the well-known aflatoxin, but the unfamiliar "fumonisin"!

The death of 9 people in Jixi, Heilongjiang Province due to fumonisin poisoning caused by eating homemade food "sour soup" attracted the attention of the whole country. How does eating "sour soup" lead to fumonisin poisoning? What foods in life can cause fumonisin poisoning? Can fumonisin poisoning be cured?

On October 19, 2020, Ms. Li, the only survivor of the "sour soup" poisoning incident in Jixi, Heilongjiang, passed away. So far, all nine poisoned people in the poisoning incident have died, and no miracle has appeared...

So, what exactly is the culprit "fumonisin" that caused this tragedy?

In fact, fumonisin is a toxin produced by the yeast subspecies of Pseudomonas cereus, which can cause food poisoning. Fumonisin can cause poisoning under certain conditions. Take the "sour soup poisoning incident" as an example. In fact, there is nothing wrong with the sour soup food itself. The final cause of the poisoning is that the sour soup was left for too long and was polluted by the external environment (soaking or fermenting, etc.), which led to the massive reproduction of "Pseudomonas cereus", and then secreted the highly toxic "fumonisin" toxin, causing death.

In addition to the foods that have been reported, such as sour soup and black fungus, there are actually many foods around us that are easily contaminated by Pseudomonas cereus and produce deadly fumonisin.

Generally speaking, foods that are easily contaminated by pathogens often need to be soaked or fermented for a long time. A damp, dark and airtight kitchen is a place where alfalfa acid is easily contaminated by pathogens. In addition, sugary, fat-containing and fermented foods, especially fermented foods made from cereals and potatoes, are also easily contaminated by pathogens. Usually, these pathogens are extremely small in number on food materials. When they are improperly stored or soaked and fermented, they will multiply in large numbers and cause poisoning after consumption.

Emma found the following types of food that are easily contaminated by pathogenic bacteria and produce fumonisin, so be careful when eating them:

1. Fermented flour and rice foods: such as fermented cornmeal, corn starch, stinky rice cakes, sour soup, hanging rice cakes, and fermented rice dumplings;

2. Spoiled white fungus and black fungus that have been soaked for too long must be eaten immediately after soaking, and try not to exceed 24 hours.

3. Potato products: such as rice noodles, rice vermicelli, vermicelli, starch, rice noodle rolls, rice noodles, rice noodles, etc., generally should not be eaten for more than 48 hours.

If symptoms of fumonisin poisoning occur in your life, you should immediately stop eating the suspected poisoned food, stimulate the throat with your fingers, chopsticks, etc. to induce vomiting, and take the suspected food to a doctor as soon as possible.
