[Source] It is the meat of the mud snail of the family Polistidae. Caught on the beach between May and September.

[Original morphology] The shell is round, 10-19 mm high, 7-14 mm wide, thin and brittle, white and transparent when young, and yellow and opaque when large; the spiral part is not protruding, the shell surface is smooth, with many delicate rings and longitudinal lines; the shell opening is wide, and the length is equal to the shell height. The body is soft, about 40 mm long, 15 mm wide, rectangular, and cannot be completely retracted into the shell; the color is grayish yellow or reddish yellow, and the skin is slightly transparent. There is a head disk at the front end, which is large and thick, shaped like a shoe, slightly concave at the front end and slightly divided into two leaves at the back end, covering part of the front end of the shell. The eyes are degenerate and buried in the skin of the head. The mantle is underdeveloped and covered by the shell, which later becomes a thick leaflet, part of which turns to the back of the shell. The plantar surface of the foot is broad, rounded in front and slightly truncated in the rear end, accounting for about 3/4 of the total length of the body. The feet on both sides are enlarged, and their edges and the rear end of the head disk each cover a part of the shell.

[Source] From Yao Kecheng's "Food Materia Medica" 1. "Minzhong Haicuo Shu": Mud snail, the shell is like a snail but thinner, the meat is like a snail but shorter, and it is rich in saliva and fat. The best mud snails are produced in Nantian, Yin County, Siming. They are born in early March in spring, are very fine like rice, have soft shells and are delicious. They grow slightly bigger in early April and in May, with fat and oil filling their bellies. Those caught during the plum rain are called plum snails, which can be stored for a long time. If soaked in wine for one or two nights, the fat will overflow from the shell and become as shiny as crystal. The ones taken in autumn have harder flesh and less paste, and the taste is not as good as that taken in spring. The meat in central Fujian is lumpy and has no fat, so it is not edible.
