[Source] It is the tuberous root of the Cucurbitaceae plants such as the large-seeded snow grove , the lovely snow grove and the Chinese snow grove . Before seedlings emerge in February or March, or after the above-ground parts wither in September or October, dig out the tubers, remove the reed heads and roots, wash off the mud and sand, cut the large ones into pieces, and dry them in the sun or on a low fire. This product is most susceptible to mold and insect infestation, so avoid exposure to moisture and turn it over and dry it in the sun more often during summer and autumn.

The cut ones are mostly in half, quarters or irregular blocks. The outer skin is brown or gray-brown, slightly rough; the cross section is pale white. The texture is firm and powdery. It has a faint smell and a slightly bitter taste. The best ones are those with uniform pieces, thick meat, fine texture, less fiber, flat skin and bright yellow color. The flesh is black, dry, and hollow and fibrous inside and is a defective product.

[Chemical composition] The tubers of both Echinops edulis and Echinops chinensis contain saponins and bitter substances. The contents of crude saponins are 5% and 10% respectively, and the contents of bitter substances are 1.5-2% and 0.2% respectively. The main aglycone of saponin is oleanolic acid, and the sugars include glucose, gum sugar and glucuronic acid. Recently, two kinds of saponins have been isolated from the tuberous roots of the lovely snow dandelion: snow dandelion saponin A and B, and the aglycone of both is oleanolic acid. Two other tetracyclic triterpenoid bitter substances (bitter elements) were obtained: cucurbitacin A and cucurbitacin B, the former is dihydrocucurbitacin F-25-acetyl ester, and the latter is dihydrocucurbitacin F.
