The edible parts are the involucre and receptacle of the flower buds, which have a chestnut-like aroma and can be eaten fresh, made into sauce, used as a soup ingredient, or processed into canned food. Currently, the world's annual demand for canned artichokes is over 100,000 tons. Artichoke sepals are also candied.

When eating the flower buds, put them into boiling water and cook for 25 to 45 minutes. Take them out when the sepals are easy to open, peel off the bracts, slice the receptacle, put them both in a pot, sprinkle with fine salt and marinate for a while, pick them up and squeeze out the water, mix with seasoning, and make a salad.
