The aroma components include 60-80% matsutake alcohol, 5-10%, isotsutake alcohol (2-octen-1-ol) 15-30%, and methyl cinnamate. It also contains antitoxic pyrimidine, which may be an organic acid containing a base nucleus. This ingredient is also found in foods such as rice sugar, yeast, soybeans, apples, spinach leaves, liver, and egg yolks. It has an antagonistic effect on spasms caused by injection of 2-methyl-6-amino-5-hydroxymethylpyrimidine in mice.
