Alfalfa is rich in vitamin K, which is higher than any other vegetable. Other vitamins such as C and B are also very rich. It is a valuable food.

Alfalfa has the largest number of types, most of which are natural woody plants. There are three main types of alfalfa produced in China: the first is purple alfalfa, which has an upright stem about six centimeters long and has purple flower pods that bend and twist. The second is yellow alfalfa, whose stems do not stand upright but crawl on the ground. It blooms yellow flowers that are shaped like sickles. Both species are produced in various provinces and cities in the northern region. The third type is wild alfalfa, commonly known as grass head, also known as golden flower vegetable. Its stems lie on the ground, and each thin stem has three leaflets. It is grown naturally and cultivated in the Yangtze River Basin of my country for consumption.

On each thin stem of alfalfa, there are three-toothed leaves, like an inverted heart shape, with a slightly rounded or concave top and serrated upper end. The surface of the leaves is dark green, and the stems are very short. When eaten, the leaves are the main component. It is produced in large quantities in Jiangsu, Zhejiang and Shanghai provinces. Every household uses it as a vegetable in their daily life when it is on sale.

There are many records of ancient people eating alfalfa in the "Qunfangpu", which are really too numerous to mention. Tang Mengshuo's Diet Therapy Materia Medica says that alfalfa "benefits the five internal organs, benefits the body and strengthens the person. It washes away the evil heat in the stomach and intestines, and clears the heat and toxins in the colon."

Now, we will briefly describe the main uses of grass head in diagnosis and treatment as follows:

Alfalfa prevents bleeding: all types of bleeding, such as nosebleeds, bloody gums, hematemesis, hemoptysis, bloody stools, abnormal uterine bleeding, and anal bleeding. The drug uses vitamin K, which is considered a treatment that has a blood vessel coagulation effect. In fact, the food that contains the most vitamin K is alfalfa.

Alfalfa is used as a preventive agent for hemorrhage, and the results of the experiment show that it is very effective. It can prevent various minor hemorrhages, as well as lung, stomach and duodenal bleeding.

Of course, fresh alfalfa is the best way to eat it, and it tastes delicious. Fresh alfalfa is available in all seasons, even in cold seasons. However, due to climate and farmland, the product is sometimes very tender and sometimes very old. Patients can eat it often as a side dish to prevent bleeding. The pickled "Pickled Golden Flower Cabbage" has the same effect.

Alfalfa clears internal heat: Alfalfa is a refreshing vegetable and can indeed clear internal heat after a meal. Especially in the dry season, it can be used as a side dish with a significant effect, which is better than watercress.

After alfalfa is fried in oil, it is eaten while hot and seasoned with light soy sauce. After cooling, it tastes good when eaten, and its juice has a refreshing feeling on the lungs and stomach. In the dry season, if you feel dry lips and tongue, it is used as a side dish for maintaining health.

How to take at home: 1. Pick out the old and yellow stems of alfalfa, wash them, and then stir-fry them with stove fuel oil. They will taste very tender. 2. Shanghai restaurants offer stir-fried alfalfa, which is made by removing the stems and stir-frying them with alfalfa leaves. Therefore, it is very tender and the market price is slightly higher. 3. Alfalfa is incredibly delicious when eaten cold, and the juice from the grass head is more refreshing and tasty than other fruits and vegetables.

Alfalfa leaves are our ideal vegetables because they are rich in nutrients. Among green leafy vegetables, it has the highest vitamin K content. In particular, its vitamin A content is very close to that of carrots, and its vitamin C content is more than two to three times that of carrots. These nutrients are higher than those of broccoli.
