Sage goes well with dairy and fatty foods, and is sometimes added to wine, beer, tea, and vinegar. Sage has a strong flavor, so don't use too much to avoid masking the flavors of other ingredients. Since sage cannot withstand high temperatures or long cooking times, it should be added near the end of the cooking process.

Function and indications

Clears away heat and dampness; promotes blood circulation and regulates menstruation; detoxifies and reduces swelling. It is used for jaundice, red and white diarrhea, damp-heat diarrhea, irregular menstruation, dysmenorrhea, sores, furunculosis, and traumatic injuries.
