(1) Shacha Burdock

Ingredients: 500 grams of fresh burdock, 30 grams of shacha sauce, 10 grams of sesame paste, 10 grams of peanut butter, and 15 grams of pickled pepper paste. Appropriate amounts of refined salt, MSG, chicken essence, dry starch, and white sugar, a few lettuce leaves, and 1500 grams of refined oil (about 50 grams consumed).

Preparation: Peel and wash the fresh burdock, cut it into "straight" strips (or use burdock segments in clean water), soak it in clean water for 10 minutes, then take it out and drain the water, put it in a bowl, add shacha sauce, sesame paste, peanut butter, refined salt, chicken essence, sugar, and pickled pepper paste, mix well, then sprinkle dry starch on them one by one and set aside. Put a clean pot on the fire, add refined oil and heat it to 70% hot, put in the powdered burdock strips and fry them. When they turn golden brown, remove from the oil and put them on a plate lined with lettuce.

(ii) Burdock and Pork Rib Soup

Ingredients: 250 grams of burdock, 250 grams of pork ribs, a little coriander, 2 teaspoons of salt, a little pepper.

Method: Soak burdock slices in vinegar water to prevent discoloration. Chop the ribs (or pork belly) into small pieces. Put water in a pot and bring it to a boil. Add the spareribs and burdock. After boiling, switch to medium-low heat and cook for about 20 minutes. Add salt and pepper to taste. Serve in a large bowl and sprinkle with cilantro.

(III) Honey Burdock

Ingredients: 1 pound of burdock, 240 grams of malt, 1 pound of sugar, 4 sour plums, and a little white sesame seeds.

Method: 1. Cut the burdock into 3 cm long pieces, add water (the burdock must be marinated), cook until it is well-cooked, add sour plums and stir up and down to make it taste good, then add sugar and continue to simmer over low heat until the sugar dissolves, then stir in maltose, and stir frequently until one side is charred, and wait until the water is dried up. 2. Add a little white sesame seeds before use to increase the flavor. Note: Water will evaporate more easily if you don’t cover the pot.
