1. Raw material selection: You can choose ripe longan that is small in size and not suitable for fresh sale.

2. Cutting the fruits: First use scissors to cut the fresh longan fruits one by one from the cluster.

3. Sun drying: On a sunny day, pour the longan onto a clean drying mat and dry it in the sun until it is 50% dry. Then bake it in a roasting stove. On rainy days, it can be sent directly to the roasting stove for drying.

4. Peeling the meat: When the dryness reaches 70% to 80%, the meat can be peeled manually. When peeling the flesh, stack 3 to 5 slices of longan flesh on top of each other and press them into a small piece with your hands. This method is called stacking. You can also use your fingers to pinch each piece of meat into small pieces, which is called a single slice.

5. Drying: Longan flesh can continue to be dried in the sun or in an oven. Dry until the flesh is loose and not sticky when you grab a handful and hold it tightly before letting go.

6. Grading: There are three types of grading: sun-drying, lamination and fire-roasting, each of which is further divided into 2 to 3 grades.

7. Packaging: Most of them are packed in wooden boxes and tinplate boxes. The wooden box is lined with bamboo leaves and covered with straw mats. Each wooden box can hold 50 kg, and each Makou box can hold 30 kg. After being filled, the lid is sealed with tin soldering.

The whole family can take and eat the homemade longan meat whenever they want. Homemade longan meat does not contain any preservatives, so it is safe and hygienic.
