The raw materials must be fresh yellow sweet oranges, fragrant oranges, etc., peeled, and the outermost layer (orange layer) of the fruit is taken as the raw material.

The orange peel peeled off during the making process is shaved off the outermost layer with a special planer. The peeled small skin is in the shape of irregular circles, commonly known as money peel. Add 100 kg of orange peel, 50 liters of plum brine (brine for pickling plums) and 0.5 kg of alum, and put them into a jar for soaking. After 48 hours, remove the orange peels, blanch them in boiling water for 2 minutes, and immediately rinse them in tap water. The rinsing time should be about 24 hours. Then drain the orange peel and salt it with 50% salt and 30% plum brine (referring to the percentage of raw material weight). Salt it for about 20 days, remove it and dry it to make orange peel.

To make juice, boil licorice in water, drain the residue and concentrate it. Add appropriate amount of sugar and saccharin, dissolve them together to make juice for later use.

Soaking and Drying: Put the orange peel into a jar, pour boiling licorice juice into the jar and cover it. After soaking for 2 hours, take out the orange peel and part of the juice, put them evenly on a baking tray, and send them to the drying room to dry. After it dries, add the original juice again and repeat it many times. After the last addition and drying, add 1% of the weight of the finished product licorice powder when it comes out of the drying room and mix evenly to get the nine-processed tangerine peel.

Its production is mainly based on sweet oranges and tangerines, and their peels. Therefore, you don’t need to buy dried tangerine peel in normal times.
